Orange Sunrise Muffins

Ingredients:

4 Tbsp. butter or margarine, softened
1/4 cup sugar
1 large egg, lightly beaten
1 tsp. grated orange peel
1/2 cup orange juice
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ground ginger
1/2 cup oat bran

Procedure:

In a small bowl, blend butter and sugar. Add egg, grated orange peel, and orange juice; blend thoroughly. In a separate bowl, stir together flour, baking powder, salt, baking soda, ginger and oat bran. Make a well in center of flour mixture; add liquid ingredients all at once. Stir just to moisten. Spoon into well-greased muffin cups, filling each 2/3 full. Bake in 375° oven for about 20 minutes or until muffins are browned and tops sring back when lightly touched.

Variations and Tips:

Use premium orange juice.

Yield:

Makes 12 muffins.
