Sweet Potato Bread

Here's an unusual bread that your family and friends probably haven't tasted before. It's dark and very flavorful, studded with raisins and nuts, and tangy from the apples.

Ingredients:

3/4 cup cooked, mashed sweet potatoes, at room temperature
2 eggs, at room temperature
1/2 cup butter, at room temperature
1 cup sugar
6 tablespoons evaporated milk
2 cups self-rising flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup grated or finely chopped apples
1/2 cup raisins
1/2 cup nuts

Procedure:

Preheat oven to 350 degrees. Grease a 9-inch loaf pan.

Sift together flour, baking soda, and baking powder; set aside.

Cream butter and sugar; add eggs one at a time, scraping the bowl after each addition. Add milk and mix well. Add potatoes and mix again.

Gradually add flour mixture, mixing well. Add apples, raisins, and nuts, and stir until blended. Bake 45 minutes, until a tester inserted in the center comes out clean.
