Ginny's Recipes
Rice Pudding

Ingredients:

4 cups milk
3 cups cooked white rice
2/3 cup sugar
1/2 teaspoon salt
1 package cream cheese 8 oz
2 eggs
1 teaspoon vanilla (pure is best)

Procedure:

Combine 3-1/2 cups of the milk with the rice, sugar, and the salt. Bring to a boil over med. heat and cook for 15 minutes. Stiring occasionally. In separate bowl, beat cream cheese adding eggs and the rest of the milk. Pour slowly into the rice mixture. Place in baking dish and bake at 350' until center of pudding is 160', usually about 25 minutes. You can use half the amount of cream cheese if you prefer a less richer flavor.
